Chardonnay Marc Pepper Sauce

Grape pomace is the focus of our newest sauce. It taps into the benefits of upcycled Chardonnay grape solid residues of the winemaking process that consists of grape seeds, skins and pulp.  This agriculture pomace or Marc, is meticulously collected, cleaned dried and powdered for consumption. It is also patented to "improve the texture, flavor, aroma, mouthfeel, and nutritional content of the food composition". 

Yearly more than half a million tons of grape pomace becomes waste.  This makes up the largest underutilized by-product from winemaking with more than 1.1 million tons generated in 2019 in California alone.

Pains taking efforts are made to create a special proprietary blend of chardonnay marc, aged with a special soybean, coconut and/or palm oil transesterification, and Chardonnay vinegar.  The result makes a compelling taste when mixed with the Scotch Bonnet pepper blend.  Slightly sweetened with organic agave syrup and further acidified with fresh pressed lime juice creates one special hand-crafted creation.
