Scotch Bonnet peppers have a rich history.  They can be traced back to the Amazon basin in Brazil. It is here where a subgroup of the Arawakan tribes, the Taino people, first encountered this fruity and fiery pepper.  They grow to be yellow, red, orange, and also harvested green, being a less ripe fruit.

Scotch Bonnet chili peppers are a staple pepper in Caribbean cuisine, specifically Jamaican, Haitian, Trinidadian, and Grenadian.   Not far a way, it is also used in Nicaragua, Costa Rica and Panama as well.  But, West Africa, West Indian, Sri Lankan, and Maldivian cuisines also rely on Scotch Bonnet peppers.

One of the most common uses for the peppers in the Caribbean is in spicy Jamaican jerk seasoning.  Its used liberally with chicken, fish, soups and shrimp.

It is used to make the famous Caribbean or West Indian pepper sauces. And in Nigeria, it is generally used in many dishes to make the food spicy.

With D's All Sauce Scotch Bonnet Peppers, even at a Scoville level on its heat scale of 100,000-350,000 in comparison to the well-known jalapeno pepper of 8,000, you'll register the flame, but you also get the flavor!

Most find a Scotch Bonnet Pepper to have a fruity, sweet, mildly smoky, cherry-like, even an apple taste-its savory.  Add in the perfect blend of vinegar and lime juice to not only add acidity to help keep the sauce from oxidizing but to neutralize the heat of spicy food.  The acids in these ingredients bind to the capsaicin molecules and helps to reduce the burning sensation.

Finally, blend in a little organic agave nectar to complement the flavors with a tangy sweetness, and you have an amazing pepper sauce that leaves a great taste that gives passion to the heat.  It all blossoms into a refreshing flavor to suit your spicy needs.
